Thanksgiving is almost here and this Sweet Potato Casserole with Marshmallow recipe is always a hit!
Whether you’re hosting a holiday party or will be a guest in someone’s home, it is always polite to bring along a dish to share. This is a good side dish to make for Thanksgiving – and it will get rave reviews from everyone who tries it. The best news: it’s easy for busy moms
If you’re a sweet potato fan, you will love this recipe, and if your kids are picky eaters or sweet potatoes aren’t your thing, they just may be once you try this casserole. My family found a recipe similar to this years ago on Food.com. We’ve made a few slight changes to it.
Sweet Potato Casserole with Marshmallows
Ingredients:
1 (40 oz) can of Bruce’s cut yams, drained
½ cup brown sugar
½ teaspoon cinnamon
¼ teaspoon salt
1 egg, beaten
4 tablespoons melted butter
1 (16 oz) bag of miniature marshmallows
Directions:
Butter a one-quart baking dish. Preheat your oven to 350 degrees. Mash the yams in a bowl and add brown sugar, cinnamon, one egg, salt and the melted butter and mix well. Pour half of the mixture into the baking dish. Cover with half the bag of marshmallows (I use a little less; just add the amount you prefer). Add other half of the yam mixture. Bake for 30 minutes. Remove dish from oven and top with the remaining marshmallows (I use a little less than the entire bag). Bake for another 10 minutes until the marshmallows are golden brown. This Sweet Potato Casserole is a well-loved Thanksgiving side dish I have to have each year. Enjoy!
