This chia seed pudding recipe is the perfect healthy snack for your kids this summer. With many brand-named puddings containing loads of sugar and even artificial food coloring, I set out to create a recipe my kids would love and that I would be comfortable serving. We are also a low-dairy family since my daughter has severe IBS that we control with her diet, so that inspired us to look for alternatives.

If you aren’t familiar with chia seeds, here are a few facts:

  • Chia seeds are a great source of omega-3 fatty acids
  • Chia seeds come from a flowering plant that’s native to Mexico and Guatemala and appears to have been an important crop to the Aztecs.
  • Chia seeds are known to boost energy, aid digestion, lower cholesterol, and stabilize blood sugar.
  • Chia seeds are heavy in calcium, manganese and phosphorus. They are also packed with protein.
  • And yes, there is a connection between them and Ch-Ch-Ch-Chia Pets.

Ready to give them a try? These ingredients leave you with a sugar-free, dairy-free, gluten-free and vegan creamy, almost tapioca-like pudding your kids are sure to enjoy.
