I enjoy baking at home when I make time for it, and this amazing banana chocolate chip muffin recipe is one of my most loved. I make everything from baked pumpkin donuts to chocolate zucchini cake (it’s good, I swear!), but these muffins are one of my all-time favorites. I love eating them for breakfast! Plus, this recipe is the perfect way to make use of all of those bananas you bought that didn’t get eaten and are overripe!
Banana Chocolate Chip Muffin Recipe Ingredients:
– 1 cup granulated sugar
– 1 stick unsalted butter, room temperature
– 2 eggs
– 4 mashed overripe bananas
– 1 tablespoon milk
– 1 teaspoon vanilla
– 1 teaspoon cinnamon
– 2 cups all-purpose flour
– 1 teaspoon baking powder
– 1 teaspoon baking soda
– 1 teaspoon salt
– 3/4 cup chocolate chips
Directions:Preheat the oven to 325 degrees Fahrenheit. Grease (or use a non-stick) muffin tray. Cream the sugar and butter in a large mixing bowl until light and fluffy. Add the eggs one at a time, beating thoroughly after each. In a bowl, mash the peeled, overripe bananas with a fork. Add and mix the milk, vanilla and cinnamon. In a separate bowl, mix the flour, baking powder, baking soda and salt. Add the banana mixture to the creamed sugar and butter mixture and stir. Add the chocolate chips and mix. Add dry ingredients and mix just until the flour disappears (do not over-stir).
Pour batter into muffin tray. Bake about 18-22 minutes until an inserted toothpick comes out clean.
