The ONLY Pumpkin Cheesecake Recipe You’ll Ever Need
It’s fall and that means pumpkins are everywhere! In the stores, on people’s porches and a main ingredient in desserts and coffees.
I’m never the girl who is going to say, “Give me all the pumpkin,” but I am the one who will enjoy a pumpkin dessert or two, especially pumpkin cheesecake or this pumpkin muffin recipe that has a brown sugar and cinnamon topping. If you’re looking for a pumpkin cheesecake recipe that is guaranteed to be a crowd favorite because it’s tasty, look no more! And (score!) it’s very simple too.
Pumpkin Cheesecake Recipe Ingredients
2 packages (8 ounce each) of softened cream cheese
½ cup white sugar
½ cup canned pumpkin
½ teaspoon vanilla extract
½ teaspoon of ground cinnamon
2 eggs
1 pre-made graham cracker crumb pie crust (9-inch ready to fill)
Cool whip – optional for topping
Recipe Directions
Just another reminder to make sure your cream cheese is room temperature so it mixes well with the other ingredients, because if you don’t the cheesecake will not turn out the way it should.
Preheat oven to 350 degrees F.
Put the cream cheese, sugar, pumpkin, cinnamon and vanilla in a mixing bowl and use mixer until blended. Add the eggs and beat just until they are blended.
Pour the mixture into the graham cracker crust.
Bake for 40 minutes. Let cool and then refrigerate for 3 hours.
You can also follow this recipe, but add chocolate chips. It’s best to pour 1/2 cup of mini chocolate chips on the crust, then pour the pumpkin mixture over them, and top with 1/4 cup of mini chocolate chips so you can still really taste the chocolate.
