I love this recipe for white chicken chili, and we enjoy it every month of the year! It’s hearty enough for the winter months but great in the summer with some tortilla chips. An added bonus is that it’s not too tough to make and is bursting with flavor! I originally found this white chicken chili recipe on Food.com and made a few tweaks to make it perfect for us. It’s so good!

White chicken chili ingredients:

1 lb. boneless skinless chicken breast, cut into 1/2 inch cubes
1 medium white onion
1 1/2 teaspoons garlic powder
1 tablespoon oil (vegetable is great)
2 15-ounce cans great northern beans, drained and rinsed
1 24-ounce container of low-sodium chicken broth
1 teaspoon oregano
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
2 4-ounce cans diced green chilies
3/4 cup heaping sour cream
1/2 cup whipping cream (or use half and half to make it a little healthier)

Directions:

In a large pan, saute the cut chicken, sliced onion, and garlic powder in heated oil until the chicken is cooked through.

Add the rinsed beans, chilies, chicken broth, and seasonings.

Bring to a boil, then reduce heat and simmer for 30 minutes (uncovered).

Remove the pan from the burner, and stir in whipping cream and sour cream. Serve this chili with cornbread or tortilla chips.

This white chicken chili recipe is perfect for a Sunday lunch, a birthday party, a family get-together, or a potluck meal. It’s a guaranteed crowd-pleaser. If you like leftovers (and if you don’t devour this when you first make it), this white chicken chili will warm up very well! Double the recipe if you must!
