My husband is a fan of any candy containing peanut butter, so this recipe was incredibly tempting when I happened upon it on Pinterest. Not only do these reese’s pieces no-bake cookies contain Reese’s Pieces. They also contain a hearty helping of peanut butter. Some health-conscious readers may turn up their noses at the corn syrup this recipe calls for, but cookies aren’t supposed to be healthy anyway. If you only make these occasionally, I figure it’s all okay. And they’re so good!

 

Reese’s Pieces No-Bake Cookies

Ingredients:

1 cup white sugar
1 cup clear corn syrup
4 tbsp butter
1/2 tsp salt
1 1/2 cups peanut butter
1 tsp vanilla extract
4 cups Special K original cereal
1 cup Reese’s Pieces

Directions:

In a medium sauce pan bring sugar, syrup, butter, and salt to a boil over medium-high heat. Allow to boil for 1 minute before removing from heat. Stir in peanut butter and vanilla until smooth. Fold in cereal making sure to coat thoroughly. Gently mix in Reese’s Pieces until evenly combined. Drop a tablespoon of the mixture onto waxed paper or aluminum foil and allow to cool in the refrigerator. Makes about two dozen cookies depending on the size of your drops.
