There is something about Grandma’s cooking that just can’t be outdone. Both my Grandma and my husband’s Grandma have the best cooking. They make you feel safe, at home, and warm all over. Eating these special yummy dishes bring back great memories. I just can’t get enough.  Luckily for me at my Wedding Shower my husband’s Aunt made me a cookbook of some of the favorite and special recipes from his Grandma. I have cherished these and enjoy making them.One of my favorite recipes, and the easiest, is a Chicken Casserole.

They call it “funeral casserole” because it can be made to feed a big group and she used to make it for funeral dinners at church. It is so yummy. I love to make it when we have friends over for dinner and they always ask for the recipe.  My family loves it and we have it at all of our family holiday gatherings. So here it is for you to try! Keep in mind you can cut this in half or double it based on family size.

Grandma Mudgie’s Funeral Chicken Casserole

3 lbs chicken, cooked and shredded, or 3 cans of chicken
6 slices of bread, torn
1/4 lb of butter or margarine, melted and poured over bread in a large bowl (I don’t use quite this much)
2 eggs, beaten
1 can of chicken noodle soup (lower sodium)
2 cans of cream of mushroom soup
1 can of water chestnuts chopped (we do not add this ingredient)
1 small can of French Fried Onions


Put the bread soaked in butter in a large 9×13 pan, add remaining ingredients except French Fried Onions, and add pepper to taste. Bake at 350 degrees for 1 hour. Sprinkle 1 small can of French Fried Onions on top for the last 15 minutes.
