For Christmas, my mother-in-law made me a recipe scrapbook with several family favorites, from appetizers to entrees to desserts. Next to each one, she wrote a note about why the recipe is significant (in some cases it is just because my husband likes it). One in particular caught my eye, the “easy” lasagna

This gift meant a lot to me. For one thing, my mother-in-law is not over-the-top crafty and I know it took her a long time to make the book. For another, I always appreciate any encouragement I can get in the kitchen when it comes to making new recipes (I’m easily discouraged) so this has given me plenty of motivation.

I tried a dinner one tonight titled “Easy Lasagna.” Boy, is it ever. Who has time for all the layering in a traditional lasagna recipe anyway?

My family really enjoyed it — I hope yours does too!

Ingredients for Easy Lasagna:

1 bag (24 oz or so) of frozen cheese ravioli
1 package (16 oz) frozen spinach, thawed OR fresh spinach, sautéed in olive oil
1 jar spaghetti sauce
Shredded mozzarella cheese (to taste/preference)
Parmesan cheese (sprinkled)

In a 9 x 13 pan, put a small amount of spaghetti sauce to cover the bottom. Make a layer of frozen ravioli — about half the bag (note: it’s okay to leave some space between the noodles — they expand when it cooks). Spread all of spinach on top.

Cover with 1/2 of remaining sauce. Cover with mozzarella cheese. Sprinkle with parmesan cheese. Layer with remaining ravioli. Cover with remaining sauce, then both cheeses.

Cook at 350 degrees for about 30 minutes, or until it is cooked through.
