As back-to-school time is looming, we moms know that it’s time to start getting prepared to send our little ones off each day ready to take on the world (or, well, the kindergarten world at least). One of the best ways to prepare your child/ren for a great day at school is to start them off with a hearty, healthy breakfast.
Now I know I am guilty of feeding my kid toast and jelly, sugary cereal, or Eggo waffles on occasion. It’s better than sending him off to school on an empty stomach, but I know I could do better.
I also have a 6-month-old baby in the house, so cooking a full spread each day just isn’t going to happen. There are a few quick and easy breakfasts that are a healthy breakfast that I plan to feed my little boy before heading off to school.
This recipe is a knock-off of something I eat every time I go to a city that has a Corner Bakery. They call it Swiss Oatmeal, I have no idea if that is the proper name for it or not!
Healthy Breakfast: Swiss Oatmeal
Ingredients:
2 cups uncooked rolled oats
1 cup plain yogurt
1 cup milk (we use almond milk)
1-2 cups chopped fruit of your choice – apples, bananas, pears, and berries all work well. The only thing to avoid is citrus. I recommend a small (2/4 to 1/2 inch) size for the pieces.
1/4 cup dried fruit of your choice – raisins, dried cranberries, dried cherries, etc.
Optional – brown sugar, honey, walnuts or pecans
Okay, prepare yourself because this is a tough one (sarcastic voice).
Dump all of your ingredients into a bowl. Stir until everything is well combined. Refrigerate overnight. Serve with a small splash of milk, pinch of brown sugar or drizzle of honey, and chopped nuts on top.
This is so filling and delicious, everyone will love it! You can make a double batch and it will keep in the fridge for 3-4 days.
