Pulled pork sandwiches, slaw, and kettle chips! |
The warmer months are a great time to enjoy sandwiches of all kinds. Even better if those sandwiches are easy to make and your kids gobble them up. I have mom friends who lament how difficult it is to prepare homemade meals for their families when they have hungry, screaming toddlers clinging to their legs in the kitchen at 5 p.m. I have an 18 month-old. I understand.
So I present this slow cooker pulled pork recipe, from allrecipes.com. You can get this going in your slow cooker in the morning in less than five minutes. At dinner time, take another five minutes to shred the pork and dump in barbecue sauce, and you’re all set. No screaming toddlers lying at your feet on the kitchen floor, crying while you labor over complicated meal preparations. And your toddler will actually eat this food. At least mine did.
Two ingredients make this recipe especially interesting. The first is that the pork tenderloin is cooked in root beer. Second, the sandwich is topped with slaw. I’m not always a big fan of cole slaw, but slopping some on top of a pulled pork sandwich sounded delicious, and it was. You can make your own slaw or buy it ready made. I purchased a bag of shredded cabbage and a jar of cole slaw sauce to keep things fairly easy.
This recipe made so much pulled pork that I froze half of it to make more sandwiches later. I also discovered leftover barbecue pulled pork makes a great topping for nachos in place of traditional taco seasoned meat.
- 1 pork tenderloin (2 pounds)
- 1 can or bottle of root beer (12 ounces)
- 1 bottle of your favorite barbecue sauce (approximately 18 ounces)
- 8 hamburger buns, split and lightly toasted
Put the pork tenderloin in a slow cooker and pour in the root beer. Cover and cook on low until well cooked and shreds easily, about 6 to 7 hours. Drain meat and cut or shred. Stir in barbecue sauce. Serve on hamburger buns. Top with slaw, if desired.
