It’s been almost a year now since I decided to change the way my family eats. I removed all the junk and highly processed foods from our cupboards. I replaced everything with fresh produce and natural foods. No more white flour or sugar. I wanted to find better things for them to eat like these oatmeal banana muffins.

We eat 90% “clean” in our house as of today. I cannot stress enough how awesomely great this change has been in our family. My husband and I have lost a total of 75 pounds! No diets, no gimmicks, just eating GOOD food and exercising on a regular basis.

Anyway, it’s always been a little difficult to find and make things fresh that the kids will enjoy. They love salads, fresh fruits, and veggies. However, when I made them 100% rolled oatmeal for the 1st time, they didn’t eat it. They were used to the sugar-packed Quaker’s brand, which they loved. So, I came across a recipe on Pinterest (LOVE that site) and FINALLY my girls are eating oatmeal. Just not in the traditional way.

You can mix up this recipe any way you’d like. Add different fresh fruits. I’ve done bananas and strawberries and all came out very yummy. It’s a great way to use overripe bananas too!

Oatmeal Banana Muffins

2.5 cups 100% rolled

1.5 tsp baking powder

1/2 tsp baking soda

2 ripe bananas

3/4 cup sweetener (I use Stevia; just make sure you have the equivalent of 3/4 cup sugar)

2 eggs

8 ounces plain Greek yogurt

Take all ingredients, except oats, and put them into the blender. Start with half the oats, then add more as it blends. Blend until it becomes a batter. Pour batter into either a muffin pan or cupcake pan. (I used a cupcake pan so they would be smaller for the girls.) Bake at 350 degrees for 15-20 minutes, or until a toothpick comes out clean. Serve them up!

The best part is these little cakes are only 97 calories!
