It’s already nearly back to school time (yes, I said it!). For a busy mom of three, I always need to look up back to school organization ideas and tips so mornings and evenings are not as chaotic. Between homework after school, the doorbell ringing, trying to work from home, and heading off to sports, meal planning is a must or we’ll be eating frozen pizza, cereal, food at the concession stand or McDonald’s at 8:30 PM! Above all, meal planning is key! So I am sharing some of my go-to, budget friendly and fast meals; I figured you could always use another meal idea. Rotisserie Buffalo Chicken Wrap or Quesadilla

I swear by visiting Sam’s Club and buying the $4.99 rotisserie chickens. Pull the skin off and use some of the shredded chicken to make wraps. Stuff a flour tortilla with ingredients, then close the wrap with a toothpick and put it in the air fryer to make it golden brown. If you prefer a quesadilla, then fry it in the skillet.

Lettuce/Spinach
Sliced Cherry Tomatoes
Shredded Cheddar Cheese
Buffalo Sauce (to taste)
Ranch (to taste)

Chicken Salsa Soup

Another rotisserie chicken idea is chicken salsa soup. I love one pot meals and this one is prepless – even better!

1 medium-size jar of your favorite salsa
Shredded Chicken
Black Beans
Corn

You can warm the ingredients on the stove top in no time! The amounts of each ingredient are a personal preference. Serve it with sliced avocado, a touch of sour cream, some shredded cheddar cheese and tortilla chips. If you like spicy, you could also add some jalapeƱos to it, also. Chicken Salsa Soup is another extremely easy, healthy, and a good alternative to tacos.

Taco Baked Potato

Although baked potatoes taste great with just butter and sour cream on them, there are man other ways to fix up a spud! Instead of using your potatoes as a side dish, you can also serve them loaded with meat and other toppings. I like to get potatoes and have a taco baked potato bar. All in all, a simple meal!

Afterward, save any of that taco meat for tacos and you have yourself another meal for the week.

As the school year starts I always find myself scrambling to come up with meal ideas that are also inexpensive, fast, and taste good.
