This easy, shortcut lasagna recipe is simple and isn’t at all short on flavor! My sister shared the recipe with me, and it’s been a favorite for many years.

Shortcut lasagna recipe ingredients:

1 lb. ground beef
2 cloves of garlic, crushed or I use the refrigerated minced garlic (the jar tells you the equivalent of fresh cloves)
1 28-ounce jar of meat sauce (This amount works fine, but I buy the jar the size larger of sauce and use more than 28 ounces; we like heavy sauce and it helps prevent the lasagna from being dry when reheated)
1/2 cup of water
8 uncooked lasagna noodles
2 cups shredded mozzarella cheese
1/2 cup Parmesan cheese, grated
1 large egg, lightly beaten
1 12-ounce container light cottage cheese
1 teaspoon pepper

Shortcut lasagna recipe directions:

Crumble the beef into a 2-quart microwave safe bowl with the garlic. Microwave on high for about 5 minutes until browned, stirring once halfway through. Drain and rinse. Stir in the spaghetti sauce and the water.

Combine the egg, cottage cheese, and pepper in a separate bowl.

Spread about 1/2 cup of the meat sauce in a 9 x 11 baking dish. Top with half of the noodles, half of the cheese and egg mixture, half of the meat sauce, and half of the mozzarella cheese. Repeat the layers with noodles, cheese and egg mixture, meat sauce, and mozzarella cheese. Cover with foil and bake at 350 degrees for 45-50 minutes.

Remove from the oven and sprinkle with the Parmesan cheese. Bake for 5-7 minutes uncovered. Let stand for ten minutes prior to serving.

*Remember to use the water and the foil so the lasagna noodles cook.

*If you want to save some calories, you can always use less mozzarella cheese or make the recipe with ground turkey.

We LOVE this shortcut lasagna recipe! It is super simple and it warms up well, too. Serve with a salad and some garlic bread and you have yourself a wonderful meal.
