This unsloppy Joe recipe is easy, and delicious. 

Since I only work out of the home part-time I am mainly in charge of cooking dinner. Lately I have been trying to keep things interesting in the kitchen. I also try to cook healthy (relatively anyway!), easy and budget-friendly meals. This isn’t always an easy task. My dinner last night accomplished at least two of those things; and bonus, I already had every ingredient that I needed. This of course was largely because I was not interested in venturing out for the third time, baby in tow, to hit the grocery store, again. I also tend to kick simple recipes up a notch — adding gourmet ingredients like cheese curds or specialty spices — so this Unsloppy Joe recipe really resonated with me.

I like a good sloppy joe as much as the next guy, er kid, but am not a fan of why it got its name in the first place; they are indeed sloppy. The fact that I didn’t have any buns in the house, but did have puff pastry in the freezer, ultimately inspired my recipe. I have seen other recipes that include a meat filling in the pastry, but wasn’t sure how this one would taste.

Unsloppy Joe Recipe

1lb ground turkey or beef

1 can Manwich Sloppy Joe sauce (I used about 3/4 to minimize the sauciness)

1 sheet Pepperidge Farm Puff Pastry (in the freezer section), thawed

1/2 onion, diced

1 tbsp. olive oil

1/4 cup shredded cheese

Preheat the oven to 400 degrees (per pastry package instructions).
Brown the turkey and drain any excess fat. Sauté the onion in the olive oil until soft, add to the cooked meat. Add the sloppy joe sauce to the meat/onion mixture and stir until heated through.

Lay the puff pastry out and cut in even squares, the number may vary depending on how large you want each “unsloppy” joe to be. I ended up with 9, they were big enough to add a large spoonful of the meat mixture to each square.

Place the meat in the middle of the square and top with shredded cheese. Fold the edges of the pastry over, making a triangle, and seal the edges (use your finger to brush a little water on the dough if needed to help seal it) and make sure no meat is spilling out. Place them on a baking sheet and in the oven for 15-18 minutes or until tops are golden brown. Serve immediately.

They were yummy and much easier to eat than a traditional sloppy joes.
