These Chocolate Peanut Butter No-Bake Cookies feel like a semi-healthy treat because they’re made with oats and peanut butter. Don’t be fooled, though. They’re rich and packed with sugar, and they’re delicious. I got this recipe a few years ago from allrecipes.com. My daughters helped me whip them up on a recent rainy day, and my husband repeatedly tells me these are his favorite cookies.

Chocolate Peanut Butter No-Bake Cookies

Ingredients:
  • 1 ¾ cups white sugar
  • ½ cup milk
  • ½ cup (1 stick) butter
  • 4 Tbsp. unsweetened cocoa powder
  • ½ cup peanut butter (crunchy or smooth)
  • 3 cups quick-cooking oats
  • 1 tsp. vanilla extract

Directions:

In a large pan, combine sugar, milk, butter, and cocoa powder. Bring to a boil, and cook and stir for 1 ½ minutes. Remove from heat, and stir in peanut butter, oats, and vanilla extract. Drop by spoonfuls onto wax paper on a large plate or cookie sheet (I usually fill two cookie sheets). Let cool until hardened (I keep my cookies in the fridge).
