You should try this Mexican Lasagna recipe if you are looking for a new simple healthy recipe to serve your family. I feel like every single day when the clock hits 4 pm, the wheels in my head start spinning, my stomach is growling, the kids are losing it…and the dreaded question presents itself: What’s for dinner? If you can relate, I have a recipe for you!

If you know me, you may think this is funny that I consider it a ‘dreaded’ question because I LOVE food.  I like to cook.  I just have a hard time coming up with food that everyone will eat, and that isn’t too complicated to make while two children are whining and pulling on my legs.  I have messed up more recipes than I can count on both hands because I was distracted.  I have gotten into a pretty sad rotation of meals.  So I am sharing this recipe in case any of you are in a similar situation.

Check out this Mexican Lasagna: a healthy, easy-to-make meal that means you have great leftovers to eat another day (SCORE!).  We like Mexican food at our house, and we have tacos about once a week, so this makes a great alternative:

Mexican Lasagna Recipe Ingredients:

1 lb extra lean ground beef or ground turkey

½ cup chopped onion

½ cup chopped green pepper

½ cup chopped red pepper

1 package of taco seasoning

1 -15 ounce can of diced tomatoes with juice (I use part of a second can, too!)

2 cups low-fat cottage cheese

2 eggs

8 ounces of shredded cheese (reserve 2 ounces)

6- 8-inch flour tortillas

Mexican Lasagna Recipe Directions:

Brown the meat and drain.  Mix the onion, peppers, taco seasoning and diced tomatoes with juice with the meat.  Mix cottage cheese, eggs and cheddar cheese in a separate bowl.  Place three tortillas in the bottom of a 9×13 inch pan.  Layer ½ of the meat mixture, then ½ of the cheese mixture.  Repeat the layers, tortillas, meat and cheese.  Bake at 350 degrees for 40 minutes. Sprinkle remaining cheese and bake for 5 more minutes.

Serve with lettuce, sour cream, salsa, black olives and guacamole.  Serves 6.
